I want to lower the action slightly on my celebrity, by removing 1 or more shims. Will removing all the strings to get at the bridge affect them in any way, or can I just re-use them? (The strings are brand new, and I don't really want to waste them.)

Hey, Mike!

I've performed this same surgery on my Celebrity. I just loosened the strings from the tuning pegs and laid them over to the side. I had to repeat the procedure several times until I got the action right. The strings I had on my O at the time were D'Addario EXPs (classical). They lasted for several months afterward. BTW,you may also have to do a truss rod adjustment for the new string height.

That should be, "you might have to do a neck adjustment". I've changed the saddle height on my 1537 Elite and old Legend several times and never had to adjust the neck.
