I'm thinking of getting an Adamas, and Alpep has some textured top models on his web page. I've had a 1598, so I'm familiar with the smooth top; what's different about a textured top? Does it affect the sound? Is it 'better'?

I don't have any verifiable, logical reason on why... but from playing a number of each type, the textured top has more of "it" in a noticable quantity.

textured top guitars do sound better to my ears. There are several factors going on here.
the finish on the top is very thin. Although it looks like it is very thick it is not.
The texture then gives more surface area to the top. This is similar to putting an ice cube in a drink or crushed ice. The crushed ice makes the drink get cooler faster because it has more surface area contact with booze. More surface area, more vibration. more sound.

Al, I don't generally listen to ice cubes in booze, but I do agree that the textured tops sound way mo betta.

When 100 out of 100 people tell me that textured tops sound better than smoothies I don't worry about knowning exactly "why". I've owned 2 SMT models and both got pitched in favor of textured tops. They just sound better, that's all.

forgot to mention that the clear coat on the other guitars is probably thicker than the textured top.

If you want to really blow your mind, check out the cross-weave top on the new 1680 Adamas slothead - major tone mojo!

Of course, if you find what you're looking for on Al's list, you'll probably end up ahead a chunk of cash over a new Adamas...

It seems to be generally excepted that the textured tops sound better (and I agree), so why are they not in the catalogue as standard production models ?

Yes, but find a U681T - the slothead with textured top...and the new cost was about $1,000 less than the 1680. Can't find a U681T, get the 1680, both great guitars.
