Why are some saddles at an angle, some at 90 degrees to the strings, and some staggered for each string? I guess that it has something to do with harmonics at the 12th fret, but what factors decide which saddle style to choose?

Brad, the saddle configuration is likely chosen for its ability to set the intonation. On electrics, it's usually easier, with the fine adjustment. On acoustics, without that, it is a little tougher, and that is why you see all the variations.
