Do Elites come with shims under bridge ?

Any trick to removing bridge to adjust ?

Good Question.

New USA Ovation guitars used to come with 2 or 3 shims under the saddle.
I am not sure about any new guitars that are being produced in Asia.

There's no trick to taking out shims. Just loosen the strings, carefully lift out the saddle, and voila!, there are the shims. Just remember, removing or adding a shim has a 2x effect on string height.
