I am looking to bone my martin guitar but I dont want to do all the cutting and filling, now here in UTAH I have 2 options one is famous Bob colosi guitarsaddles.com or I can choose https://macnichol.com/ both have high reviews and good reputation what are you experience with both of them and which one should I choose?

I would suggest getting a raw bone nut and taking it to a competent luthier and he/she will make it perfect for your guitar
