O Magnum Mysterium composed by Morten Lauridsen. My favorite version is by the Master Chorale of Tampa Bay. The version by the Robert Shaw Chamber Singers is also very good.

On the traditional stuff, I like "I'll Be Home For Christmas" because of its historical place in the generation above me. "White Christmas" is a close second.

Also, I like some of the new/old songs like "Night of Silence" that combine counter-melodies. There are others. Lots of good stuff.
